Summer is my favorite time of year for produce selections. I’m not a green thumb, but I’m determined to become one someday when I grow up (or maybe when I’m not growing a ‘kid’ garden)! There’s nothing like fresh fruits and veggies from your own garden. I’ve only gotten to experience this thanks to neighbors and friends who DO have a green thumb and put in all of the time and effort it takes to tend to a garden. Thank goodness for overproducing plants! They have to share with me!
I’ve collected some great ways to use some popular summer produce other than just eating them washed, plain and raw (which is awesome too, of course.) Here are a few of my favorite ways to use and prepare summer produce for tasty and healthy eating all summer long!
When I think of summer and tomatoes, I think SALSA! Fresh salsa is so good and we use it in our house as a regular “condiment” on meats, salads, in wraps, on eggs, mixed into rice, etc… Here’s a great traditional salsa recipe, the chunkier the better in my opinion.

I was served a salad very similar to this recipe once at a barbeque and it was so refreshing! If you have fresh mint growing in your garden then this is a “must make” recipe!
